Here is a great recipe for your fresh lobsters!

Lobster Au Gratin

Can serve 12-14

2x 1.5 lb Fresh Lobsters

3x cups Light Cream

6x Egg Yolks

3x tbs Rice, uncooked

6x tbs Butter

3x tbs Flour

3x tbs Sherry or fortified wine

1/2 cup Bread Crumbs

Salt and Pepper to taste

Cook and pick your lobsters. In a large bowl, mix all the ingredients together and pour into a buttered casserole dish. Sprinkle with bread crumbs and blob with butter. Bake in a 400 degree oven for 15 to 20 minutes. You can make this dish ahead of time, and throw in the oven just before your party. It also travels well. You are sure to impress your lobster lovers!
