Old Fashioned Orange Pudding

This recipe for Orange Pudding, is best served cold.

4 x Oranges

3 cups milk

1 cup of sugar

3 eggs (separated)

2 tablespoons of cornstarch

pinch of salt.

Remove peel and seeds from oranges and cut into small pieces. Sprinkle half of the sugar over the oranges in a casserole dish (something oven proof) and let sit for a few hours.

Beat the egg yolks, add the rest of the sugar, cornstarch and salt, and set aside.

Bring the milk to a boil, and then add the egg yolk mixture. Mix well, (it will thicken) remove from heat, and let cool a bit, then pour over the oranges and sugar in the casserole dish.

Beat the egg whites to a stiff froth, and add two tablespoons of sugar. Spread this over the top of the casserole, and brown in the oven.

Let cool, and eat this dessert cold.
