Sweet Potato Bake... Great side dish!

Sweet Potato Bake Casserole

Ingredients:

6 good size sweet potatoes

1 tablespoon salt

4 tablespoons butter, at room temperature

1/2 cup white granulated sugar

1/2 cup firmly packed brown sugar

1 large egg

1/2 cup milk or light cream

Method:

Peel sweet potatoes, and chop into chunks

Cover with water (will need large pot) and add the 1 tablespoon salt. Bring to a boil over high heat, and cook until the potatoes are soft right through, about 30 to 50 minutes.

Preheat the oven to 350 degrees F.

Drain the potatoes, and place in a large bow. Using a fork or masher, mash the potatoes until the texture is even.

In a medium size bowl, whisk together the butter and the sugars, then add the egg, whisk until mixed, and then add the milk and mix well. Stire this mixture into the potatoes, and mix well.

Transfer to an ovenproof casserole dish or baking dish, smooth out the surface and bake until the potatoes are lightly golden on top, about one hour.

This makes 8 to 10 delicious servings of Sweet Potato Bake. It goes great with any meat, but is especially nice with turkey.
